Meat Science & Muscle Biology
Meat Science and Muscle Biology are parts of the Department of Animal
Sciences. The Meat Science Laboratory contains modern molecular, biochemical
and cell culture laboratories as well as a USDA inspected abattoir and
processing plant.
Faculty teach in ten courses, from Meat to Metabolism and our students
have been featured in the Wall Street Journal. A full spectrum of basic
and applied research focus on making better, safer, more nutritious and
more affordable food for mankind.
